Sustainable Coffee Brands: The Indoor Farming Advantage

Your morning coffee has a story that starts long before the kettle boils. Behind the aroma are decisions about land, water, weather and the distance beans travel to reach your kitchen.

That story is becoming harder to ignore. Forest clearing can destroy habitat. Erratic rainfall can damage a harvest. Shipping disruptions can hold up supplies and increase costs. For anyone comparing sustainable coffee brands, the growing and delivery model deserves as much attention as the bag.

Big Guns Coffee is building a different future in Tryon, North Carolina: indoor hydroponic coffee agriculture paired with a customer experience centered on freshly roasted, on-demand coffee.

Founded by Marine Corps Veteran T. Shane Johnson and his daughter Charli, Big Guns Coffee is the first and only indoor hydroponic coffee farm in the United States. Our mission starts with a practical question: how can we grow coffee with less water, use space more efficiently and give growers greater control over the environment?

The environmental cost begins with the land. The Smithsonian Migratory Bird Center describes how the expansion of open, full-sun coffee cultivation has contributed to deforestation, soil erosion and lost wildlife habitat. Outdoor farming practices vary, and shade-grown agroforestry demonstrates how coffee growers can preserve trees and biodiversity. The choice of farming system matters.

Indoor coffee cultivation offers another route: growing trees within a managed space, without needing to clear a new outdoor coffee field for that operation. It brings the conversation about eco friendly coffee sourcing closer to the actual decisions made at the farm.

Climate change and coffee prices are connected. In a March 2025 report, the United Nations Food and Agriculture Organization said average world coffee prices rose 38.8% in 2024, largely because unfavorable weather disrupted supply in major producing countries. The report also identified higher shipping costs as a contributor.

A bad harvest does more than reduce the number of beans available. It makes purchasing and planning harder for roasters, retailers and customers. Climate change adds longer-term pressure to a crop already exposed to changing weather.

A long supply chain adds more points of vulnerability. A coffee shipment may depend on inland transport, port capacity, shipping routes and customs before it reaches a roaster. The International Coffee Organization's July 2024 market report documented how Red Sea insecurity and a lack of available ships at Djibouti had affected Ethiopia's exports.

Those examples show why the future of coffee needs more resilient growing systems and more deliberate fulfillment. Big Guns Coffee is working on both.

The Hydroponic Breakthrough: NASA Tech Meets the Morning Roast

Our breakthrough begins at the roots.

Big Guns Coffee's proprietary ebb-and-flow indoor farming system was developed in collaboration with a consulting NASA scientist, Appalachian State University and Isothermal Community College.

The system periodically delivers nutrient-rich water to the root zone, then allows it to drain. Growing indoors gives us the ability to manage the conditions around the coffee tree with greater precision.

Water delivery, plant nutrition, lighting and the indoor environment become variables growers can manage. That changes how we approach a crop traditionally tied to a narrow range of outdoor growing conditions.

Our proprietary farming system delivers two defining advantages:

  • 98% less water: Compared with traditional tillable-land cultivation, our system uses dramatically less water to grow coffee.
  • Two to four times more crop per square foot: Higher production density makes more productive use of the growing space.

These figures describe the Big Guns Coffee farming system. They show why we see controlled-environment agriculture as a meaningful part of coffee's future.

Indoor precision also changes the relationship with weather. Coffee trees are grown inside a managed environment, reducing their direct exposure to outdoor rainfall swings and temperature extremes. Growers can focus on creating suitable conditions around the plants.

Responsible indoor farming still requires careful management of energy, equipment and materials. Water savings and productive use of space are important parts of the picture; the complete operation matters too.

For T. Shane and Charli, this is a hands-on agricultural movement. A Marine veteran and his daughter are applying scientific collaboration to a familiar product and asking what can be improved at its foundation.

Why 'American Grown' Matters for Freshness

American-grown coffee brings cultivation closer to American customers. When beans are grown domestically, their journey to a domestic roaster can avoid the international ocean-freight leg associated with imported green coffee.

That creates an opportunity for a shorter, more traceable route from farm to roaster. It also gives customers a closer connection to the people growing their coffee.

Freshness has another clock: time since roasting.

Coffee often travels internationally as unroasted green beans, then is roasted near the customer. An ocean journey does not automatically mean the final roasted coffee is stale. The roast date, packaging and storage conditions all influence the cup.

The Specialty Coffee Association explains that roasted coffee changes over time as it releases gases and aromas, while oxygen reacts with oils and aroma compounds. Getting recently roasted coffee into your brewing routine helps you enjoy the qualities the roast was chosen to express.

That is where our on-demand model makes a practical difference.

Our everyday blends are roasted and fulfilled on demand. Orders connect to roasting, packing and domestic delivery, helping move freshly roasted coffee toward your kitchen instead of building up finished bags long before customers order them.

Our Tryon-grown coffee and our online blends have distinct sourcing paths. The indoor farm advances American coffee agriculture; the separately sourced, online range brings the convenience of on-demand roasting and delivery to your daily cup.

Together, those two parts of Big Guns Coffee express the same ambition: improve how coffee is grown and how customers experience it.
